The Penticton Wine Lab currently tests wines/grape juice for:pH, titratable acidity, volatile acidity, free S02, total S02, alcohol (by ebulliometery or distillation), malic and lactic acids (by enzymatic analysis and paper chromatography), cold stability (conductivity method), protein stability (turbidimetric method), residual sugar (rebelein method).
